- 1 lb (454 g) ground beef, 80/20 - 1 tsp (5 g) kosher salt - 1/2 tsp (2.5 g) freshly ground black pepper - 1 tsp (5 ml) Worcestershire sauce - 4 slices (about 4 oz / 115 g) sharp cheddar cheese - 2 tbsp (30 ml) vegetable oil - 4 hamburger buns - 2 tbsp (28 g) butter, softened - 2 medium (about 6 oz / 170 g) roasted New Mexico green chiles, peeled, seeded, and roughly chopped - 1 small (about 4 oz / 115 g) red onion, thinly sliced - 1 medium (about 5 oz / 140 g) tomato, sliced - 4 large (about 4 oz / 115 g) dill pickle slices (optional) - Lettuce leaves (optional)
1. Roast and prep chiles: If using fresh green chiles, roast over flame or under broiler until charred, place in a bowl covered with plastic wrap for 10 minutes, peel, remove seeds, and chop. If using pre-roasted chiles, thaw and chop. Heat 1 tbsp (15 ml) oil in a small skillet over medium and briefly sauté chopped chiles just to warm; set aside. 2. Form and season patties: Divide ground beef into 4 equal portions and gently form into 4 patties about 3/4 inch thick, slightly larger than buns. Season both sides with salt and pepper and brush with Worcestershire sauce. 3. Cook patties: Heat remaining 1 tbsp (15 ml) oil in a heavy skillet or cast-iron pan over medium-high heat (or preheat grill). Cook patties 3–4 minutes per side for medium, longer for desired doneness. During the last minute of cooking, place a slice of cheddar on each patty and cover pan (or close grill lid) to melt cheese. 4. Toast buns and warm toppings: Spread butter on cut sides of buns and toast in a skillet or on grill until golden. Lightly char or soften onion slices in the skillet if desired. 5. Assemble burgers: On bottom bun place lettuce (if using), patty with melted cheese, a generous spoonful of warm chopped green chile, tomato slice, onion, and pickles if using. Top with bun and serve immediately.
