1. Soak potato batons in cold water 30 minutes; drain and pat very dry. Fry at 325°F/165°C until tender but pale, 3–4 minutes; drain and cool. Increase oil to 375°F/190°C and fry until golden and crisp. Season fries with fine salt. 2. Meanwhile, season steaks. Sear in neutral oil over high heat 2–3 minutes per side, then add butter, garlic, and thyme; baste 1–2 minutes to desired doneness. Rest 5–10 minutes. Serve with pan juices and fries.
