Ingredients

- 1 lb (454 g) fresh nopalitos (cactus paddles), trimmed and sliced into 1/4-inch (6 mm) strips
- 2 medium Roma tomatoes, diced, about 1 1/4 cups (200 g)
- 1/2 small white onion, thinly sliced, about 3 oz (85 g)
- 2 oz (55 g) queso fresco, crumbled (about 1/2 cup)
- 1/4 cup (15 g) fresh cilantro leaves, chopped
- 2 tbsp (30 ml) fresh lime juice (about 1-2 limes)
- 2 tbsp (30 ml) extra-virgin olive oil
- 1 small dried chile de arbol, stemmed and seeds removed, finely crumbled (about 1/2 tsp) or 1 serrano chile, finely chopped
- 1/2 tsp (3 g) kosher salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper
- 2 tbsp (30 ml) water (optional, to adjust dressing consistency)
- Optional garnish: 1 tbsp (8 g) toasted pepitas (pumpkin seeds)

Short Description:
A bright, tangy salad of tender nopal cactus paddles tossed with lime, cilantro, crumbled queso fresco, tomato and a touch of local chile for heat. Served chilled or at room temperature as a refreshing side or light course.

Regional Notes:
This Durango variation emphasizes local queso fresco and fresh lime for brightness, with a restrained addition of local chile (often chile de arbol or serrano) to give a gentle regional heat. Compared with central Mexican versions, the Durango style tends to be simpler and cheese-forward, highlighting local dairy and citrus rather than heavy dressings.

1. Prepare the nopalitos: remove any thorns and the rough edges, rinse well, then slice into 1/4-inch (6 mm) strips.  
2. Cook the nopalitos: bring a medium pot of water to a boil, add 1/2 tsp (3 g) salt and the nopalitos. Optionally add 1/4 tsp (1 g) baking soda to reduce slime. Boil until tender, 8–12 minutes. Drain and rinse under cold running water until the mucilage is removed; drain well and pat dry with paper towels.  
3. Dress the cactus: in a large bowl whisk together lime juice, olive oil, remaining 1/2 tsp (3 g) salt, black pepper and the crumbled chile de arbol (or chopped serrano). If the dressing seems too sharp, add up to 2 tbsp (30 ml) water to mellow it.  
4. Combine salad ingredients: add the drained nopalitos to the dressing and toss to coat. Stir in the diced tomatoes, sliced onion, and chopped cilantro. Let rest 8–10 minutes for flavors to meld; taste and adjust salt or lime as needed.  
5. Finish and serve: gently fold in the crumbled queso fresco. Transfer to a serving bowl, sprinkle with toasted pepitas if using, and serve chilled or at room temperature.
