- 8 all-beef hot dogs, approx. 2.5 oz (70 g) each - 8 hot dog buns - 2 tbsp (30 g) unsalted butter, softened - 1/4 cup (60 ml) yellow mustard - 1/4 cup (60 ml) ketchup - 1/3 cup (80 g) sweet pickle relish - 1 small onion, finely chopped - 1 tbsp (15 g) pickled jalapeños, optional - 1 tsp (5 g) kosher salt - 1/2 tsp (1 g) black pepper
1. Preheat grill to medium heat (about 350–400°F / 175–200°C). Score hot dogs lightly if desired to prevent curling. 2. Butter the insides of buns and place buttered sides down on the grill to toast until lightly browned; remove and keep warm. 3. Place hot dogs on the grill and cook, turning occasionally, until heated through and charred to preference, about 5–7 minutes. 4. Place each hot dog in a toasted bun, top with mustard, ketchup, relish, and chopped onion; add jalapeños if using. Season with salt and pepper to taste. 5. Serve immediately with chips or grilled corn.
