1. Preheat oven to 275°F (135°C). 2. Pat the roast dry and sear in a heavy, ovenproof pot or Dutch oven over medium-high heat, 3–5 minutes per side, until a deep brown crust forms. 3. Cover the pot with its lid and place in the oven; roast slowly until the meat is easily pulled apart with forks and an instant-read thermometer reads about 200°F (93°C), approximately 4–5 hours for a 3 lb (1.36 kg) roast. 4. Remove the pot from the oven and transfer the roast to a cutting board; let rest for 15–20 minutes. 5. Use two forks to shred the meat into bite-sized pieces and serve warm.
