- 1 lb (454 g) ground beef, formed into 12 meatballs, approx. 1.5 oz (42 g) each - 1 large egg (about 50 g) - 1/2 cup (120 ml) fine breadcrumbs - 1 tsp (6 g) salt, divided - 1/2 tsp (1 g) black pepper, divided - 2 tbsp (30 ml) olive oil - 1 large onion, finely chopped (about 8 oz / 225 g) - 2 cups (480 ml) crushed or diced tomatoes - 3 cups (720 ml) beef or vegetable stock - 1 cup (240 ml) short-grain rice, rinsed - 1 tsp (5 g) paprika - 1/4 cup (15 g) chopped parsley for garnish
1. Combine ground beef, egg, breadcrumbs, 1/2 tsp salt, and 1/4 tsp pepper; form into 12 small meatballs. Heat oil in a deep skillet or shallow pot over medium heat, brown meatballs briefly on all sides, then add chopped onion and cook until translucent; stir in tomatoes, stock, remaining salt and pepper, and paprika and bring to a gentle simmer. 2. Add rinsed rice to the simmering stew, cover and cook over low heat 20–25 minutes until rice and meatballs are cooked through and rice is tender; garnish with chopped parsley and serve hot.
