- 12 whole chicken wings, approx. 3.5 oz (100 g) each; approx. 2 lb 10 oz (1.2 kg) total - 1/2 cup (120 ml) soy sauce - 1/2 cup (120 ml) cane vinegar or white vinegar - 6 cloves garlic, crushed - 2 bay leaves - 1 tsp (5 g) whole black peppercorns - 1 tbsp (15 g) brown sugar (optional) - 2 tbsp (30 ml) vegetable oil for browning - 1/2 cup (120 ml) water
1. Sear wings in 2 tbsp (30 ml) oil until browned in batches; remove and sauté crushed garlic briefly in the same pot. Return wings, add soy sauce, vinegar, bay leaves, peppercorns, brown sugar, and 1/2 cup (120 ml) water; bring to a simmer. 2. Cover and simmer gently until wings are tender and sauce reduces to a glossy braise, about 25–30 minutes; uncover and reduce further if needed, then serve hot with steamed rice.
