- 2 bison strip steaks, approx. 8 oz (225 g) each - 1 tbsp (15 ml) ordinary cooking oil - 2 tbsp (30 ml) Montreal steak seasoning - 1 tsp (5 g) kosher salt - 1/2 tsp (1 g) freshly ground black pepper - Water: as needed for light pan rinse or resting plate
1. Bring steaks to room temperature for 20–30 minutes and pat dry. 2. Rub each steak lightly with oil, then press Montreal steak seasoning evenly onto both sides; sprinkle additional salt and pepper if desired. 3. Preheat grill or heavy skillet to high heat. 4. Cook steaks 3–5 minutes per side for medium-rare, depending on thickness, until a crust forms; avoid overcooking bison to prevent dryness. 5. Remove from heat, tent with foil, and rest 6–8 minutes; use a little water to deglaze the pan if you wish to capture pan juices. 6. Slice and serve immediately.
