1 lb (450 g) sirloin steak, thinly sliced 1 large eggplant, thinly sliced 2 bell peppers (red and green), sliced 2 tbsp (30 ml) soy sauce 1 tbsp (15 ml) hoisin sauce 1 tbsp (15 ml) sesame oil 2 tbsp (30 ml) vegetable oil 2 cloves garlic, minced 1-inch (2.5 cm) piece ginger, grated 2 green onions, sliced Salt and pepper to taste Sesame seeds for garnish
1. In a bowl, mix the soy sauce, hoisin sauce, and sesame oil. Add the sliced steak to the bowl and marinate for at least 15 minutes. 2. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the garlic and ginger, stirring quickly to prevent burning. 3. Add the eggplant to the wok and stir-fry for about 3-4 minutes until it starts to soften. 4. Add the sliced bell peppers and continue to stir-fry the vegetables for another 2-3 minutes. 5. Push the vegetables to one side of the wok and add the remaining vegetable oil to the empty side. Add the marinated steak slices and stir-fry until they are cooked to your preferred doneness. 6. Mix the vegetables and beef together in the wok, allowing the flavors to blend. Season with salt and pepper to taste. 7. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
