Emulsify and season: with the blender running, slowly pour in the extra-virgin olive oil and sherry vinegar to emulsify. Add 1/2 cup (120 ml) cold water, salt, and pepper; blend to a silky, slightly thick soup. Adjust texture with additional cold water if needed. 4. Chill and refine: pass the gazpacho through a fine sieve if a smoother texture is desired, then chill in the refrigerator for at least 2 hours to allow flavors to meld; taste and adjust seasoning before serving. 5. Serve cold: ladle into chilled bowls or glasses and garnish with finely chopped cucumber, bell pepper, or croutons; drizzle a little olive oil on top if desired.
