14 oz / 400 g spaghetti 10 oz / 300 g Italian sausage (mild or spicy, depending on preference) 2 tbsp (30 ml) olive oil 1 medium onion, finely chopped 2 cloves garlic, minced 14 oz / 400 g canned crushed tomatoes 1 tsp dried oregano 1 tsp dried basil Salt and freshly ground black pepper, to taste Parmesan cheese, grated, for serving Fresh basil leaves, for garnish (optional)
1. Begin by cooking the spaghetti according to the package instructions in a large pot of salted boiling water. Once cooked, drain and set aside. 2. While the pasta is cooking, remove the sausage from its casing and crumble it into a large skillet over medium heat. Cook until the sausage is browned and cooked through. Remove the sausage from the skillet and set aside. 3. In the same skillet, add the olive oil and chopped onion. Sauté until the onion becomes translucent. Add the minced garlic and cook for an additional minute, ensuring the garlic does not burn. 4. Add the canned tomatoes, oregano, and basil to the skillet. Season with salt and freshly ground black pepper. Stir well, bringing the sauce to a simmer before returning the cooked sausage to the skillet. 5. Allow the sauce to simmer gently for about 10-15 minutes, allowing the flavors to meld together. Adjust seasoning if necessary. 6. Add the cooked spaghetti to the skillet and toss to coat the pasta evenly with the sauce. 7. Serve the spaghetti in bowls, topped with grated Parmesan cheese and fresh basil leaves if using. Enjoy while hot!
