1. Lay out four tortillas on a clean surface. Evenly distribute the sliced carne asada, Mexican cheese blend, red onion, and cilantro across the tortillas. 2. Place another tortilla on top of each, pressing down gently to secure the fillings. 3. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Place one quesadilla in the skillet and cook for 3-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese has melted. 4. Carefully remove the quesadilla from the skillet, slice into wedges, and serve with your favorite salsa. Repeat with the remaining quesadillas.
