Ingredients

- 4 cups cooked white rice (approx. 800 g)
- 1 lb (454 g) ground beef
- 1 large egg, approx 50 g (for patty mix)
- 1/4 cup (30 g) plain breadcrumbs
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tsp (5 g) kosher salt, divided
- 1/2 tsp (1 g) freshly ground black pepper, divided
- 2 tbsp (30 ml) vegetable oil, divided
- 1 medium yellow onion, finely chopped, about 1 cup (150 g), divided
- 2 tbsp (30 g) unsalted butter
- 3 tbsp (24 g) all-purpose flour
- 2 cups (480 ml) beef broth
- 1 tbsp (15 ml) soy sauce
- 4 large eggs, approx. 200 g
- 2 tbsp (30 ml) chopped green onion for garnish

Instructions

1. Make patties: In a bowl combine ground beef, 1 large egg, breadcrumbs, Worcestershire sauce, 1/2 tsp salt and 1/4 tsp pepper, and half of the finely chopped onion. Form into four even patties about 4 oz (115 g) each.
2. Cook patties: Heat 1 tbsp (15 ml) vegetable oil in a large skillet over medium-high heat. Cook patties 3–4 minutes per side until browned and cooked to desired doneness. Transfer to a plate and keep warm.
3. Make gravy base: In the same skillet add remaining 1 tbsp (15 ml) vegetable oil and 2 tbsp (30 g) butter. Add remaining chopped onion and sauté over medium heat until soft and translucent, about 5 minutes.
4. Make gravy: Sprinkle 3 tbsp (24 g) flour over onions and stir to form a roux; cook 1–2 minutes. Gradually whisk in 2 cups (480 ml) beef broth until smooth. Add 1 tbsp (15 ml) soy sauce, remaining 1/2 tsp salt and 1/4 tsp pepper. Simmer until thickened, 4–6 minutes. Return patties to skillet to warm in gravy.
5. Fry eggs: In a separate nonstick skillet, melt a little butter or oil and fry 4 eggs sunny-side-up or to preference, seasoning lightly with salt and pepper.
6. Assemble: Divide 4 cups (800 g) cooked rice among plates. Top each portion with a beef patty, ladle generous brown gravy over the patty, and place a fried egg on top. Garnish with chopped green onion and serve immediately.
