1. In a bowl whisk together soy sauce, coconut milk, brown sugar, minced garlic, grated ginger, lime juice, oil, black pepper, and salt until sugar dissolves. 2. Place chicken thighs in a shallow dish or resealable bag and pour marinade over them. Massage to coat, cover, and refrigerate for at least 2 hours or up to overnight for best flavor. 3. Preheat a grill to medium-high heat (about 400°F / 200°C). Oil the grates. Remove chicken from marinade, letting excess drip off; reserve marinade. 4. Grill chicken skin-side down first for 6–8 minutes until well charred, then flip and grill another 6–8 minutes, basting occasionally with the reserved marinade, until internal temperature reaches 165°F (74°C) and juices run clear. 5. Transfer to a cutting board and let rest 5 minutes. Garnish with sliced green onions and serve with lime wedges.
